How long does it take for an adult diagnosed with celiac to get better?

I was diagnosed about 5 months ago and I have good days, then I’ll get sick from something and not sure what it is because I have definitely not ingested any gluten. I’m wondering how long it will take before I’m better and can assume that it’s a bug rather than my disease.
Does a newly diagnosed celiac need to replace the food processor to avoid cross contamination?
